Butter Beans and Bacon.




This week saw the arrival of a delivery from https://superfood-market.com/.  . Purchases were 3kg f Butter Beans, 1kg dried apricots and a 5l container of hair conditioner.  A quick perusal of the freezer revealed a large pack of cooking bacon that needed using up, as it had been there for nearly 6 months. So for this week you can eat anything you want at our house so long as it contains butter beans, bacon or some combi thereof :)

Monday

Breakfast -  omelette

Lunch  - Avocado with garlic dressing. Lidls had avocados at 69p each on offer last week so we will have a whole one each with garlic dressing and a green salad.

Main Meal - Bacon and sweetcorn pie. Thrifty Lesley does a lovely cheap recipe for this here . We've made it in the past when baking from scratch. This week however I am cheating as I still have 1.5 packs of ready made Lidls pastry in the freezer. At 85p  a packet which we find big enough for two 4 portion pies they are a handy freezer standby.

While the oven is on I will make some Cornbread for breakfast.

Pudding - watermelon slice.

Tuesday

Breakfast - Cornbread and bacon.

Main Meal  -  Mediterranean butter beans and rice.

Tea - Bacon and sweet potato pie.

Pudding - watermelon slice

Wednesday

Breakfast - Cornbread and Mediterranean butter beans

Main Meal - bacon quiche. While the oven is on I will make a peach cobbler.

Tea - Cous cous, tinned sardines and what's left of those Mediterrean Butter beans.

Pudding - water melon slice.

Thursday

Breakfast - peach cobbler.

Main Meal - Butter bean curry

Tea -bacon and potato salad.


Friday

Breakfast - Chilli Cornbread.

Lunch - we are heading out for the day so will be taking. Bacon & cheese pastries, & slices of chill cornbread to eat. While we are out I will pick up fruit for the day to go with our lunch.

Evening meal - Butter bean curry.
